This weekend, I decided to try three new recipes for the upcoming week’s meal prep. When it comes to healthy recipes, Skinnytaste and Oh She Glows are two of my favourite resources. I find that meal suggestions from both blogs are consistently excellent, and the recipes I chose for this week are no exception. Of the three I selected (listed below), my favourite is the macaroni and cheese from Skinnytaste. The broccoli is an unexpected but delicious addition to a lightened-up version of one of my favourite comfort foods. The slow cooker Moroccan chicken was super simple and flavourful. And the vegan dal from Oh She Glows took minutes to make and is a great, veggie-filled meal I’ll be eating for lunch all week with brown basmati rice.
All in all, I’m very pleased with my meal prep this week, and have some great, healthy meals to look forward to!
